What to do with my psychology degree...?

I am a psychology major and really have no interest in being a psychologist/psychiatrist/therapist. Basically, I am not interested in the cliche psychological positions. Instead I am more interested in Statistical ysis, technical writing, research, testing, development, essment, and Industrial/Organizational Psychology altogether. Being interested in all of these things I would just like to find an internship or job having to do with any of this. I know some will suggest Human Resource positions but I would like to look beyond that. I have applied to many places involving the things I listed but no luck. Really all my resume consists of is a couple of odd jobs, a volunteer position with human resources, and a well-above average GPA in my course work. So my question is where should I look and who would hire someone with my experience, or lack of I should say...furthermore, should I consider personally appearing at companies to speak with the HR representative to put a better impression on them or is that frowned upon?
